Atop a hill overlooking the town of Faro in the northeast corner of Sicily, Giovanni Scarfone tends to 2.5 hectares of old vine vineyards. Dedicated to expressing the land and traditional methods of winemaking, he farms using organic and low intervention methods. Vines are 10-80 years in age at 820-1000 feet in elevation, with layered clay and sandy limestone tuff soils. Spontaneous fermentation with native yeasts with 12 hours on the skins, aged 6 months in stainless steel.
