Wines are produced organically and with low intervention; only indigenous yeasts are used, not temperature stabilization, no fining, no filtering. Deep gold in color, very aromatic, with apricot, apple, lemon, orange, clove, nuts, honey and pie crust. Silky apple, baked pear, orange, lemon, apricot, honey and ginger are accented by fresh acidity and gentle green tea tannins. Clove, a trace of chamomile and a streak of smoky minerality linger on the dry finish.
