NV Bodegas Osborne - Sibarita Oloroso VORS (92 pts) · 🙋‍♂️ What was the last Sherry you tasted❓· ℹ️ This wine is an Oloroso Sherry. The grapes are 99% Palomino and 1% Pedro Ximénez. The name Sibarita comes from "Sybarite," meaning a person that dedicates time to seek out good food and wine. This wine comes from a solera that started in 1792. Soleras are a form of fractional blending that build-up complexity over time. The entire solera is 106 barrels, and only 1.5% of the wine is extracted each year. VORS means that the average age of the wine in the bottle is at least 30 years of age and is verified by a tasting panel. In the case of Sibarita, the average age is over 60 years of age· 👁 Deep brown color with a medium rim· 👃 Pronounced intensity on the nose. Aromas of cedar, used coffee grounds, salted caramel, walnut, roasted Chestnut, aged balsamic (VA), wood furniture polish (VA), dried fig, dates, toffee, leather, and cigar smoke· 👄 The wine is dry, medium acidity, high alcohol (20%), and full body. A long length finish of coffee grounds, salted walnuts, and furniture polish. Overall, a slight bitterness on the finish as well· 🔔 I don't mind a touch of Volatile Acidity in my wines. It can lift the aromatics. The little bit of PX blended in must have taken the edge of this wine. The PX lends weight to the body on this round finish, and a little goes a long way. I tasted this over a week and debated on whether or not it was dry. There may be a few grams of residual sugar, but this is dry. The bitterness is refreshing but may turn away some. In researching this wine, it appears that older bottles were labeled as Amontillado, then eventually Palo Cortado, and now ending up as a dry Oloroso. The reality is, at these ages, the boundaries between these wine styles are pretty thin.
