Soil is clay-like, subalkaline with 12% active limestone. Spontaneous fermentation with native yeasts, aged in cement followed by at least 6 months in the bottle. Coral ruby in colour, with aromas of strawberry, raspberry, amber resin, apricot, grapefruit, warm summer earth and wildflowers. Apricot, strawberry, pink grapefruit, licorice, earthy minerality and citrus acidity shimmer across light green tea tannins. A trace of roasted nuts accents black cherry and lime on the refreshing finish.
