Headed today by Christian Binner, 40% of the vines are over 60 years old, with many nearly 100 years in age. Si Rose was inspired by Roman winemaking in which white wine was made with macerated grapes. Additionally, climate change is increasing the temperature in Alsace, causing difficulties with the slow ripening varieties. Grapes are from are from 2 consecutive vintages, on hillside, south facing vineyards with limestone soils. 30% was macerated for 8 months and 70% macerated for 8 days, bottled in autumn 2019.
