The vineyard elevation is at 1750 ft with a thin layer of clay loam over calcareous substrate. Giornata is dedicated to exploring the potential of Italian 🍇 varieties in California. Only native yeast fermentations. Aged for 24 months in French oak barrels with only 10% being new. The wine receives an additional 6 months of bottle age prior to release· 👁 Medium- ruby color with a pale garnet rim· 👃 Medium+ intensity on the nose. Aromas of ripe sour cherry, black cherry, raspberry, menthol, dried flowers, cola, and tar· 👄 The wine is dry, high acidity, high drying and spicy tannins, medium alcohol, and medium body. Texture like a strong black tea. A medium+ length finish of dried cherry, dried flowers, and cinnamon spice· 🔔 Put this winery on your wine radar 🍷📡. This is a stunning example of Nebbiolo in California. Really enjoyed this wine with the ripe cherry medley that was very concentrated. The florals came out on the nose. Noticeable spicy Tannins with structure to age. Definitely need food to pair with it due to acidity level. Great texture. Love the long most neutral oak elevage. This is not what I think of when I hear Paso Wine. Impeccably made 👏.
