Hand harvested, whole cluster pressed, and partial Indigenous yeast fermentation. Fermentation takes place in French oak barrels with only 5% being new. Sur Lie aging in barrels for 11 months with Bâttonage happening twice a month. Unfined and unfiltered· 👁 Medium lemon color, slightly cloudy· 👃 Medium intensity on the nose. Aromas of reduction, matchstick, lemon, yogurt, custard, orange blossom, pineapple, sunflower seeds, marzipan, oak, and anise· 👄 The wine is dry, medium acidity, medium+ alcohol, and medium+ body. A medium+ length finish of grilled pineapple and lemon zest· 🔔 Tasted, took notes, and scored. When I looked up the tech sheet, I was shocked to see a $26 retail price recommendation. This is amazing quality at that price point. 👏❤️💰This comes together nicely with a lot of well rounded aromas from pristine fruit and working the lees correctly. Very well done, but sadly only 311 cases were produced. A lot of respect for the use of restraint with this wine 👊
