This wine is 💯 Chardonnay grown in Premier Cru vineyards from the town of Vertus in the Côte de Blancs. Wild yeast fermentation in old oak casks and temperature-controlled vats followed by lees aging with bâtonnage over the winter. Further aging on the lees for over five years. There is no dosage in this wine· 👁 Medium lemon color· 👃 Medium+ intensity on the nose. Aromas of saltine crackers, fresh bread, green apple, lemon zest, yogurt, cream, and chalk· 👄 The wine is dry, high zippy acidity, medium alcohol (12%), and medium body. A medium+ length finish of yogurt, green apple, and chalk· 🔔 Let me start by saying that I often find non-dosage Champagnes acidic and a tad thin. However, this wine had perfect weight and mouthfeel, considering it didn't have a dosage. The acidity was high and balanced against the weight of the wine. Very clean and very mineral. The lees work here definitely added complexity and nuance for such a young wine. Drinking very well today! All about that Grower Fizz 👨‍🌾🍾
