NV Domaine de Bichery - La Source Extra Brut Champagne (91 pts) @domainedebichery · 🙋🏼‍♂️ Favorite Champagne food pairing❓· ℹ️ This wine is from a single vineyard, La Source, in the Côte de Bars subregion of Champagne, France. The vines were planted in 1985 on Portlandian Limestone and farmed organically. The wine is labeled as non-vintage due to Champagne's minimum aging requirements for vintage Champagne, but all of the grapes are from the 2016 vintage. The wine is 50% Chardonnay and 50% Pinot Noir. Grapes are hand-harvested at optimal ripeness with native yeast fermentation (40% neutral oak and 60% stainless steel) for the base wine. Aged on the lees for ~24 months under a crown cap. Bottled with 2 g/l of dosage· 👁 Pale gold color· 👃 Medium+ intensity on the nose. Aromas of bread dough, preserved lemon, Marcona almond, quince, green apple, custard, acacia, and lemon pith· 👄 The wine is dry, high acidity, fine bubbles, medium alcohol (12.5%), and medium body. A medium length finish of citrus and tart stone fruit followed by floral notes· 🔔La Source has a slight edge over the Les Fontaines rosé. The finish is a tad longer and a bit more complex. I highly recommend this as a BTG option for restaurants wanting something with actual vignerons behind it. The acidity on this wine is craving food. Affordable grower fizz with a lot of potential. Immaculately clean and crisp style. New house Champagne anyone? Often like to end a meal or evening with Champagne. Marcona almonds and some hard cheeses to end the evening· 💰 ~$45 #vin #lovewine #🍷 #wineterroir #wine #champagne #🍾 #growerchampagne
