Vittorio Mattioli, his wife Anna and their daughter Annalisa farm the 8 hectare property in southern Umbria; 4 hectares of indigenous old vines, 2 hectares of olive trees and 2 hectares of farro and ancient grains. The land provides all of the family’s and animal’s needs. All farming and cultivation is organic, low intervention along with some biodynamic methods. Vines are 15-50 years old, spontaneous fermentation with wild yeasts on the skins for 6 days in cement vats, then aged in steel “all winter”, “thanks to the favorable year”, it goes through only 1 racking to remove the large lees, bottled during the waning moon in early March, unfined, unfiltered. Red-violet in colour, with aromas of black cherry, sour cherry, black pepper, shake of cinnamon, a trace of wildflowers and warm terracotta. Morello cherry, raspberry and red currant are framed by bright acidity and good tannins. Morello cherry and white pepper linger on the tangy finish.
