Azienda Agricola COS is renowned not only for their pioneering amphora methods all the way back in 2007, but for protecting and expressing the terroir of Vittoria, in the southeastern corner of Sicily. Grapes are from vines in “red soil, medium consistency; formed of subalpine sands of Pliocene origin, of limestone – siliceous nature”. Spontaneous fermentation with wild yeast, aged in concrete. Transparent red-violet in colour, with aromas of raisin, cinnamon, spearmint, smoky earth, white pepper and cherry. Iron minerality wraps around red currant, raspberry and morello cherry. Fresh acidity and black tea tannins fuse with wild berries, orange peel and menthol on the lengthy finish.
